OUR STORY & PRODUCTION
What makes your whisky different from other Australian distilleries?
We make our ethanol from scratch , something very few Australian distilleries do. We grow some of our own grain on the property, source the rest locally, and use natural spring water drawn from our own land at the base of the Porongurup Range. Every step of the process happens as close to home as possible.
How many bottles are in each batch and are they limited edition?
Each of our whiskies is a single cask, small batch release, meaning once a batch is gone, it's gone. Bottle numbers vary per batch so we recommend not waiting too long if something catches your eye.
How long do you age your whiskies?
Our whiskies are aged in single casks, with each batch spending time in a carefully selected barrel, from ex-bourbon and Port French Oak to French Oak Muscat and Shiraz barrels. Ageing time varies per batch and depends on the weather and climate that year. But roughly 2-4 years.
Do you make your own ethanol from scratch?
Yes, and this is something we're really proud of. Making ethanol from scratch is something very few distilleries in Australia do. It means we have complete control over every stage of the process, from grain to glass.
Where do you source your grains?
We grow some of our own grains right here on the farm surrounding the distillery including the Mosquito wheat used in our Wheat Whisky. Where we don't grow it ourselves, we source locally from the region. We have a proud farming background and want to support our local farmers and their produce as much as possible.
Is Woodlands Distillery sustainable?
Sustainability is something we've woven into the way we operate. Our spring water is pumped using solar power, spent grain waste is fed to our cattle, and nutrient-enriched water from the distilling process is redistributed across our 450 acres of farmland. Even the distillery building itself was converted from an old shearing shed.
